A romantic monsoon getaway awaits you at Passaros in GoaNaga Belly, the cult-favourite restaurant from Mumbai known for its bold, authentic flavours of Nagaland is coming to Goa for a one-night-only culinary pop-up this Saturday, June 28, at Suzie’s Assagao.
“We’ve both visited each other’s restaurants a bunch of times and are really fond of each other’s food,” says Suzie, co-owner and executive chef at the restaurant.
Making Assagao home since April 2019, Suzie’s regularly hosts pop-ups from time to time, sometimes with chefs and other times with bars. This is their first collaboration with Naga Belly that’s all set to bring its bold, unforgettable flavoursto the table.
“Founded by Aren and Juliet, Naga Belly is a women-led restaurant with an all Nagaland team. They specialise in Naga cuisine that focuses on a lot of flavour, old cooking techniques, spice and a whole lot of fermentation,” explains Suzie.
Visit South Goa's Mobor, where the Sal meets the SeaAt Suzie’s garden restaurant, near their outdoor fire kitchen, Naga Belly will be serving special off-menu dishes they can’t prepare in their Bombay kitchen, including bamboo fire-cooking.
“They will also serve some exotic dishes with ingredients coming in from Nagaland that they do not have on their regular menu,” shares Suzie.
A walk through forgotten details at Our Lady of Rosary Church, Old GoaThe menu for this unique weekend celebration includes Pork Bhujia, Smoked Eel and Axone Chicken Wings. Expect also the earthy notes of Smoked Pork Anishi Black Curry, yum bites like Grilled Silk Worms, and flavoured aromas of Steam Fish in Bamboo tube.
There’s also the fresh Naga Green Salad, warm Yam Stew and the comforting rice and chutneys and, for that sweet ending, some dessert.
“People can expect new bold flavours with dishes they have probably never had before and won’t be able to try normally at their (Naga Belly) restaurant,” says Suzie, promising not just great food but also an even better setting.
“The dinner will be held at Suzie’s amidst our beautiful garden and Naga inspired cocktails flowing all night! The cocktails will be based on Naga ingredients that they are bringing. Also, not forgetting their beloved rice beer!” she exclaims.
